Apple Sauce Bran Cereal Muffins

One of the easiest ways to reduce calories and fats when baking, is to bake with applesauce. Not only does it reduce calories, it helps make recipes that can sometimes be dry much more moist and flavorful. Below is my heart healthy Applesauce Bran Cereal Muffins recipe. Enjoy!


1-¼ cups flour
1 Tablespoon. Calumet Baking Powder
¼ teaspoon salt
2 cups Post Raisin Brand Cereal
1-cup fat free milk
½ cup applesauce
1 egg slightly beaten
1/3 cup firmly packed brown sugar
2 Tablespoons margarine melted


Preheat oven at 400 degrees Fahrenheit

1. In a large bowl, mix flour, baking powder and salt (dry Ingredients.)
2. In another bowl, (medium size) mix cereal and milk and let it stand for about 3 minutes.
3. Stir in slightly beaten egg, applesauce, sugar, and margarine.
4. Add liquid mixture to flour mixture bowl, stir just until moistened. (Batter will be lumpy.)
5. Spray muffin pan with no stick cooking spray or (line pan with muffin cup liners).
6. Spoon batter into muffin pan sprayed with no sticking spray, or (lined with paper) filling each cup 2/3 full.

Bake at 400 degrees F. for 20 minutes or until golden brown. Serve warm. Makes 12.


Creative Exploration:

  • You can substitute your favorite healthy cereal for 2 cups Post raisin bran cereal.
  • You may substitute flour with whole grain, spelt (also known as dinkel wheat or hulled wheat), quinoa, oat and gluten free in the amount specified in recipe
