Crispy Chicken Recipe

Everybody loves a nice piece of fried chicken once in awhile. But we also know how unhealthy that fried chicken is. So I have come up with a healthy alternative to the good ole Southern Fried chicken. Below is my Crispy Chicken recipe.

Crispy Chicken

Ingredients:

  • 1 cup Post grape nuts cereal
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon dried rosemary leaves crushed
  • 1/8- teaspoon black pepper
  • 1 whole lemon, softened cut in half
  • 2 tablespoons vegetable oil
  • 8 boneless skinless chicken breast halves (2 pounds)

Directions:

Place chicken breast in a colander and rinse under cold running water.

Squeeze the lemon juice over chicken breast and massage to cover pieces.

Place cereal in blender, or (food processor) cover container, and blend on low speed until cereal is finely crushed.

Transfer cereal to a large bowl.

Add the seasonings in the bowl with cereal and mix together.

Add oil, to the bowl stir until crumbs are evenly coated.

Dip the lemon-wet chicken into cereal mixture, turning to evenly coat both sides.

Place coated chicken breasts in foil-lined 15 x 10×1-inch baking pan.

Bake Chicken at 400 degrees F for 30 to 40 minutes, or until chicken is cooked through.

Makes 8 servings

Dipping the chicken in grape nuts cereal for a crispy coating provides an excellent source of iron.
