Dessert: White Bean Pie with Almonds

We know that beans are important legumes to eat. So here is a recipe that will transform your taste buds and your perception when you prepare and eat it. It is healthy, delicious, and nutritious. It is also easy to prepare.

Thanksgiving is just a few weeks away. Substitute and prepare this recipe as part of your dessert for this festive day. You will savor the taste because the filling is not very sweet or rich and goes exceptionally well with the whole-wheat crust.

If you don’t want to make the crust, substitute a store bought frozen 10-inch unbaked whole-wheat pastry shell or the conventional piecrust.


2/3 cups dried lima beans

1- cup milk

1- cup heavy cream

½ cup liquid fructose sugar

4 eggs

2 teaspoons vanilla

¼ teaspoon salt

1 10-inch unbaked whole-wheat pastry shell

½ teaspoon nutmeg

½ teaspoon cinnamon

2 tablespoons sliced almonds

How to Prepare Pie

Preheat the oven at 350 degrees Fahrenheit

Follow the directions on the bean package on how to cook the lima beans. Drain the beans well.

Place drained beans, milk, cream, sugar, eggs, vanilla, and cinnamon in a blender or food processor. Blend until smooth. Or you can mash the beans and beat with other ingredients in a bowl.

Pour the mixture into one of the unbaked pie shell and sprinkle with nutmeg.

Bake in a pre-heated oven at 350 degrees F. for 60 to 70 minutes or until an inserted knife emerges clean.

Cool and sprinkle with almonds before serving.

Note: If you can’t find liquid fructose you can substitute liquid raw brown sugar
