Ginger Beer Recipe

Ginger Beer


  • 1 ½ cups Brown Sugar
  • 4 limes
  • 4 oz. Jamaica Ginger
  • 2 quarts Water

How to Make:

  1. In a small heavy pot, stir together sugar and 2-cups/ 500 ml water. Bring to a boil and simmer for 5 minute.
  2. Remove from heat and cool completely. Set aside.
  3. Wash and halve limes. Juice and set aside.
  4. Wash thoroughly and peel ginger root with a sharp knife. Either grate on the medium side of a grater or blend on high speed with 2 cups of water in an electric blender.
  5. With either method of grating or blending, add enough water to make up to 6 cups/1 ½   liters.
  6. Add the limejuice to ginger mixture. Strain mixture through a fine strainer, pressing down with the back of a spoon.
  7. Add sugar syrup and stir. Chill.

Serve in tall glasses over ice and decorate with lime slices, if desired.

Makes about 2qts/2 liters
